Food segregation and refrigerator storage rules in food service

How to arrange raw ingredients, prep items, and ready meals when cold rooms are limited, target warehouse temperatures and humidity, and avoiding Code of Administrative Offences fines.

Even a textbook +3 °C reading will not prevent a citation if a tray of raw chilled chicken sits on the top shelf above ready-to-serve cheesecake or washed greens. Food segregation and storage rules protect finished dishes from drip contamination, odor transfer, and spoilage.

Core food segregation rules

  • Raw goods (meat, poultry, fish, unwashed produce, shell eggs) and ready-to-eat items belong in separate refrigerators.
  • Small venues with a single cold unit may store items together only inside covered containers with strict top-to-bottom shelf zoning: ready meals and dairy on upper shelves, semi-finished items in the middle, and raw goods on the bottom shelf.
  • Strongly scented products (herring, smoked meats, spices, pungent cheeses) must be isolated from butter, cream, and pastries that absorb odors.
  • Never place food boxes directly on cold-room or dry-store floors—use dunnage racks or shelving at least 15 cm off the floor.

Standard temperature benchmarks

Manufacturer label instructions and TR CU 021/2011 always take precedence. Typical operating zones are +2 to +6 °C for deli and prep fridges, 0 to +2 °C (up to +4 °C) for chilled meat and fish, −18 °C or colder for freezers, and up to +18…+20 °C with relative humidity at or below 70–75% for dry storerooms.

Keep shipping cardboard out of kitchen line fridges

Corrugated shipping boxes carry street dust and mold spores from loading docks. Transfer goods into clean food-grade bins while keeping the supplier batch tag.

Daily monitoring without paperwork fatigue

Under SanPiN 2.3/2.4.4282-26, every refrigerator temperature is logged daily (Appendix 2) and dry storerooms track both temperature and humidity (Appendix 3). Wi-Fi sensors in WeSetup record readings hourly and alert managers on Telegram before a failing compressor ruins inventory.

Can frozen meat be thawed on a prep table at room temperature or in warm water?

No. Thawing must happen gradually inside a refrigerator at 0 to +6 °C on drip racks or in dedicated thawing cabinets; refreezing thawed raw material is prohibited.

Is it allowed to store opened tin cans of tomatoes, condensed milk, or olives in the fridge?

No—once opened, tin cans oxidize rapidly. Transfer contents immediately into a clean food container with a lid and an opening label.

Where inside the refrigerator should the thermometer or sensor sit?

Place it in the warmest working zone—near the door on the middle shelf rather than right against the evaporator fan—to reflect true product exposure.
